Am I filled with shame and self loathing? ABSOLUTELY! Would I continue in my frozen dairy gluttony if he were to bring home another batch of sugary goodness? ABSOLUTELY!
I believe that completely cutting out any treat while trying to remain on a clean eating regimen will set anyone up for disaster. Some folks are more prone to give in and binge on crap food if they don't allow themselves to stray from their strict diets once in a while.
Aaaaaand that's why I LOVE these "ice cream sandwiches". The chocolatey, chewy texture of the wafer is perfectly matched with the delicious cold concoction of peanut buttery banana greatness.
These sammies are only 100 calories each and they will definitely curb the sweet tooth of even the meanest sugar junkie! (in this case, I mean ME).

"Ice Cream" Filling
3 large bananas
1/3 C. creamy natural peanut butter
1 tbsp. honey
1 tsp. vanilla extract
--blend all ingredients in a processor until smooth. Place in freezer until the mixture is the consistency of softened ice cream. Make sure it's thick enough to spoon onto wafers, if too warm it gets quite messy!
Chocolate Wafers (yield: 76 wafers )
4 Tbsp. unsalted butter
4 Tbsp. shortening
3/4 C. sugar
1/2 C. brown sugar
1 tsp. Vanilla extract
1 C. all purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
1/4 C. unsweetened almond milk
1/4 C. semi sweet baking chips
--melt chocolate in a microwave safe dish in 15 intervals until completely melted
--cream butter, shortening, vanilla and sugars together until well mixed
--combine dry ingredients and beat into the butter mixture until all flour is moist and smooth; slowly add the milk and beat until smooth
--fold in chocolate until completely incorporated
--spoon dough lengthwise onto a long sheet of wax paper and form into a 1.5 inch log. Chill the log in the freezer for 30 minutes.
preheat oven to 350°F
--line a baking sheet with parchment paper
--remove the dough from freezer and give the log a brief roll or two to round it up (as it probably flattened slightly on the bottom) then using a serrated knife or wire cheese cutter, slice into 1/8-1/4 inch discs.
--Bake for 8-10 minutes** and remove to cool AT LEAST until the cookies can be moved from the baking sheet. If still slightly stuck, wait a little while longer.
--Make sure the cookies are completely cool before spreading the filling. I used about 1/2 to 1 tbsp. per sandwich.
**8 minutes for metal baking sheet and 10 minutes for baking stone
